Carrots are rich in beta-carotene, which when transformed by our body into vitamin A, promotes optimal retinal function, especially when it comes to night vision.
- Heat Nutrioli® in a deep skillet. Peel carrots and then use the peeler to slice them into ribbons. Season with salt and pepper. Dredge slices in cornstarch, shaking off excess. Fry in batches for a couple of minutes, until golden-brown and crisp. Place on paper towels to absorb excess oil. Serve immediately.
