Panela cheese is high in protein and calcium, but low in fat, making it low in calories, as well.
- Mix all ingredients except cheese and pineapple in a bowl until well-incorporated. Place cheese and pineapple slices in mixture and let marinade, preferably in the refrigerator.
- Heat grill and cook pineapple slices until grill marks are visible. Place on a plate. Repeat procedure with cheese. Serve hot.
Can be served with corn tortillas and salsa.
