Lettuce, Fruit, and Cashew Salad


This salad is very fresh. Its grapefruit, strawberry, and kiwi content make it rich in antioxidants, fiber, and vitamin C.


  • 400 g (14 oz) of mixed fresh lettuces (50% romaine, 30% iceberg, 10% red leaf, and 10% escarole).
  • 30 g (1 oz) of celery.
  • 10 g (0.35 oz) of red onion.
  • 200 g (7 oz) of grapefruit slices.
  • 350 g (12.3 oz) of sliced kiwi.
  • 300 g (10.6 oz) of sliced strawberries.
  • 60 g (2. oz) of Japanese surimi.
  • 100 g (3.5 oz) of cashews.

For the dressing:

  • 125 ml (1/2 cup) of Nutrioli® oil.
  • 60 ml (4 tablespoons) of lime juice.
  • 5 ml (1 teaspoons) of white vinegar.
  • 5 g (1 heaping teaspoon) of white sugar.
  • Salt to taste.

  1. Cut the lettuces into large pieces for the salad; wash, disinfect, and refrigerate.
  2. Place the lettuces into a salad bowl and add half of the dressing, the chopped cashew, and the shredded surimi; toss evenly.
  3. Decorate with strawberries, kiwis, and grapefruit slices; pour on the rest of the dressing.

For the dressing:

  1. Combine all of the ingredients and mix evenly.
