Tomato and Basil Bruschetta

Tomatoes provide vitamin C, B vitamins, and minerals such as potassium, iron, phosphorous, and magnesium. They are also rich in lycopene, which is an antioxidant and considered to be anticancerous.

Ingredients

  • 1/4 cup of Nutrioli® oil.
  • 1 garlic clove, crushed.
  • 1 baguette cut into slices.
  • 3 tomatoes cut into cubes and seeded.
  • 3 teaspoons of fresh finely chopped basil.
  • Salt and pepper to taste.

Directions

  1. Combine Nutrioli® oil and garlic. Generously glaze the baguette slices with this mix and place on a baking pan with wax paper.
  2. Bake at 200°C (392°F) for 10 minutes or until the bread is golden. Let cool.
  3. Place the tomato, basil, salt, and pepper in a container and mix.
  4. Lastly, cover the baguette slices with the tomato mix and serve.

TIP

In order to prevent the bread from falling apart, cut with a serrated knife. You can also cover the bruschetta with serrano ham, parmesan cheese, or mozzarella, and accompany with a salad.
