INGREDIENTS
For the cauliflower crust
For the pizza

For the cauliflower crust: Run the cauliflower florets through the food processor until finely chopped.

Heat a frying pan with Nutrioli® oil, fry the onion and garlic until translucent, and add the ground cauliflower while stirring until cooked, and season with salt and pepper.

Remove from heat and let cool.

Place cauliflower in a bowl with the manchego cheese, spices, and eggs. Mix until everything is well integrated.

For the pizza: Line a pizza pan with waxed paper in a round shape.

Pour the mixture into your pan, and spread with a spatula over the entire surface.

Bake at 200º C for 60 minutes or until the edges begin to brown.

Take out and decorate your pizza; spread the tomato sauce all over the surface of the cauliflower dough—top with the mozzarella cheese, then the spinach, and finally the tomato slices. Sprinkle with salt and pepper to taste.

Bake again at the same temperature for 10 more minutes or until the cheese has melted. Remove and serve immediately.
