Apple Muffins

Apples are rich in vitamins, minerals and fiber, which is very effective at reducing cholesterol and also excellent for the digestive tract, as it helps keep you regular.

Ingredients

  1. Preheat oven to 400 °F. Place 12 paper baking cups in a muffin pan.

For topping:

  1. Mix together ⅔ cup oatmeal, ¼ cup brown sugar and butter.

For batter:

  1. Combine flour, one cup of oatmeal, baking powder, baking soda, cinnamon and ½ cup brown sugar in a bowl. Mix well and add remaining ingredients. Batter should be thick, but moist. Divide among muffin cups and then add topping.
  2. Bake for 20 minutes or until lightly browned.

Directions

  1. Precalienta el horno a 200ºC, coloca 12 capacillos en un molde para panqués.

Para la cubierta:

  1. Revuelve la avena, la azúcar, la canela y la mantequilla.

Para la masa:

  1. Mezcla la harina, la avena, el polvo para hornear, el bicarbonato, la canela y el azúcar, revuelve muy bien y agrega el resto de los ingredientes, debe quedar una masa espesa pero bien húmeda, reparte entre todos los capacillos y añade también la cubierta.
  2. Hornea por 20 minutos o hasta que se vean doraditos de la superficie.
