Baked Potatoes with Spinach


Spinach is one of the most nutritious vegetables. It supplies the body with folic acid, vitamin A and minerals, such as iron, potassium and magnesium.


  • 4 potatoes
  • 2 TBSP Nutrioli®
  • 2 cloves garlic (finely diced)
  • 2 tsp rosemary (finely chopped)
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • ½ piece of goat cheese

  1. Preheat oven to 350 °F.
  2. Wash potatoes well. Make cuts in each one as if slicing, but without cutting all the way through, and wrap in aluminum foil. Place on a baking sheet and bake for 1 hour or until tender.
  3. Heat Nutrioli® in a skillet and sauté garlic with rosemary for 5 minutes. Add spinach and cook covered over low heat until spinach is tender. Drain off liquid and season with salt and pepper.
  4. Remove potatoes from oven, remove foil and, while still hot, arrange spinach between the cuts made earlier. Add crumbled goat cheese inside cuts and on top of potatoes and serve right away.
