Mushrooms contain protein and fiber, and are rich in the B vitamins that are necessary for the nervous system to function properly. They also supply minerals, including potassium, phosphorus and iron, which help regulate circulation.
- Heat one tablespoon of Nutrioli® in a large skillet. Fry bacon until crisp, remove from skillet and set aside. Sauté mushrooms in the same skillet until liquid evaporates. Add potato and season with salt, pepper and oregano. Return bacon to skillet and mix well.
- In a separate non-stick pan, heat one tablespoon of Nutrioli® and fry two eggs until reaching desired doneness. On each plate, place a portion of potatoes with two fried eggs on top and serve immediately.
