Cream of Cauliflower Soup

Cauliflower is rich in vitamin C, folates, iron and potassium, which protect your immune system and improve circulation.

Ingredients

  • 1 TBSP Nutrioli®
  • 1 onion (diced)
  • 1 medium head of cauliflower, cut in small florets
  • 32 oz. chicken stock
  • 1 clove garlic (diced)
  • 3½ oz. light cream cheese
  • ½ cup light cream
  • Salt and pepper

Directions

  1. Heat Nutrioli® in a pot and sauté onion and garlic until onion is translucent. Add cauliflower florets and let cook for a few minutes. Set aside a few pieces for garnish. Add chicken stock to the rest and bring to a boil. Lower heat and simmer for 15 minutes.
  2. Puree soup in blender with cheese and cream. Return to pot and season with salt and pepper. Serve immediately.

TIPS:

Can be served with pieces of cooked cauliflower and shredded cheese.
