Grilled Pineapple

Pineapple is high in vitamin C, potassium and magnesium. It also contains bromelain, a mixture of enzymes that aid in digestion.

Ingredients

  • 1 medium pineapple
  • 1 bunch of fresh cilantro (chopped)
  • ¾ cup tequila
  • 1½ tsp chipotle powder
  • Juice of 1 lemon
  • 2 TBSP Nutrioli®
  • Salt and fresh ground pepper to taste

Directions

  1. Peel pineapple and cut in slices between ½” and ¾” in width.
  2. In a small bowl, combine tequila, cilantro, Nutrioli® and chili powder. Pour over pineapple.
  3. Season with salt and pepper. Let marinate in refrigerator for at least 1 hour to allow pineapple to absorb flavors. Afterwards, drain and heat on a hotplate, griddle or grill.
  4. Grill pineapple pieces for 4–5 minutes on each side and serve.
