King Cake

Add a healthy touch to your ring cake by garnishing it with rolled oats, sunflower seeds and candied fruit. Share it with your family!

Ingredients

  • 18 oz. flour
  • 3 oz. sugar
  • ⅓ oz. sugar
  • 1 oz. powdered milk
  • 4 pieces of egg
  • Water, as needed
  • ¾ oz. fresh yeast
  • 3½ oz. butter (softened)
  • 3½ oz. margarine (softened)
  • ⅛ oz. bread improver
  • ¼ cup Nutrioli®
  • ½ cup whole-wheat flour

For filling:

  • Plastic figurines of the baby Jesus
  • ½ cup sunflower seeds
  • ¾ cup blueberries

For decoration:

  • ½ cup oatmeal
  • ½ cup sunflower seeds
  • 4 strips of candied fruit in red, yellow and green
  • ¼ cup sugar
  • 1 eggs (lightly beaten)

Directions

  1. Combine flour, yeast, sugar and powdered milk in a bowl and sprinkle bread improver on one side. Mix until integrated.
  2. Add egg little by little in center of mixture, continuing to integrate using other hand.
  3. Gradually add water until forming dough that’s not too dry or too moist.
  4. Bring dough to working surface. Add salt, while kneading continuously. Lift dough, unsticking it from working surface, and beat it against the surface several times until it achieves an even, smooth consistency.
  5. Add butter and margarine little by little and continue kneading. The goal is to achieve dough that’s soft, smooth and elastic and that easily unsticks from working surface.
  6. Place dough in another bowl greased with Nutrioli®. Use hands to grease the dough ball, as well. Cover with plastic wrap and refrigerate for 30–40 minutes.
  7. Sprinkle working surface with whole-wheat flour. Use rolling pin to roll dough into a rectangle. Distribute sunflower seeds and blueberries across the length. Place figurines right at the base of the rectangle. Roll them in the dough, squeezing toward the length of the rectangle until achieving a roll. Join the ends to form a ring.
  8. Place ring on a baking sheet covered with wax paper. Baste surface with beaten egg.
  9. Sprinkle oatmeal on one side and sunflower seeds on the other, followed by strips of candied fruit. Sprinkle sugar on the other side.
  • Set sheet aside in a warm place for 30 minutes or until ring doubles in volume. Bake ring at 350 °F or until golden brown.
