Lettuce is rich in water and dietary fiber. It also supplies a significant amount of vitamins and minerals, including provitamin A, B complex vitamins like folates, vitamin C, potassium and iron.
Ingredients
- ½ head of radicchio
- ½ head of romaine lettuce
- ½ head of endive
- 1 baguette
- 9 oz. wild-caught salmon, cut in large pieces
- 2 tsp Nutrioli®
For dressing:
- 7 fl. oz. Nutrioli®
- 1 clove garlic
- 1 hardboiled egg
- 1 oz. anchovies
- ½ tsp soy sauce
- 1 oz. lemon juice
- Salt and pepper to taste
- 1 oz. parmesan cheese
- Chopped parsley to taste
Directions
- Wash and sanitize lettuce. Tear into good-sized pieces
- Heat Nutrioli® in a skillet and cook salmon. Cut baguette into cubes and bake until crisp.
For dressing: - Brown garlic in a skillet. Purée in blender with egg and anchovies. Empty into a container, add Nutrioli®, and season to taste with soy sauce, lemon juice, salt and pepper.
- Combine croutons and salmon with lettuce mix. Add half of the dressing and coat evenly. Serve each portion on a plate, garnished with parmesan cheese and parsley, with remaining dressing on the side.
