Marinated Pork Ribs


Enjoy these pork ribs as a delicious finger food. In addition to having an exquisite taste, they supply protein and vitamins, including vitamin A, which is essential for proper nervous system function.


  • 2 lbs. pork ribs
  • 3 ancho chilies (stemmed, seeded and cored)
  • 10 whole allspice
  • 4 whole cloves
  • 1 clove garlic
  • 5 sprigs of fresh oregano
  • 2 TBSP Nutrioli®

For sauce:

  • 1 large tomato
  • Chile de árbol, to taste
  • 1 clove garlic
  • 1 TBSP minced onion
  • 1 pinch of fresh oregano (chopped)

  1. Place ancho chilies in boiling water and set aside until soft.
  2. Puree in blender with 2 cups of the water used to cook them, adding allspice, cloves, garlic and fresh oregano. Pour strained mixture into a pot and add ribs. Cover and simmer over low heat for approximately 1 hour, until ribs are cooked and moisture has evaporated. Add Nutrioli® and allow ribs to fry.

For sauce:

  1. Puree tomato, chile de árbol and garlic in blender. Pour into a gravy boat and add diced onion and chopped oregano.
