Mushroom Stew

Mushrooms are a well-balanced food that’s rich in protein, fiber, B complex vitamins and minerals, including potassium, calcium and magnesium.

Ingredients

  • 1 lb. mushrooms (sliced)
  • 5 large tomatoes
  • 3 TBSP chipotle chilies in adobo sauce
  • 1 large onion (sliced)
  • 1 clove garlic
  • 3 TBSP Nutrioli®
  • 2 tsp chicken bouillon powder

Directions

  1. Heat two teaspoons of Nutrioli® in a skillet and sauté onion until translucent. Add mushrooms and sauté, stirring constantly.
  2. Puree tomatoes, chipotle peppers and garlic in blender. Strain and add to skillet. Simmer, stirring occasionally, until color changes. Season with chicken bouillon powder and bring to a boil. Cook until mixture thickens slightly.
