Omelette with Pico de Gallo

Begin your day with this rounded and healthy breakfast: eggs contain the most complete protein out of all foods and also vitamins A, B, and E. They provide minerals, in particular phosphorous and iron.

Ingredients

  • 2 eggs.
  • 1 red tomato in cubes.
  • 1/2 jalapeño pepper in cubes.
  • 1/2 a slice of onion, chopped finely.
  • 2 tablespoons of milk.
  • Salt to taste.
  • 2 tablespoons of Nutrioli® oil.
  • 2 slices of manchego cheese.

Directions

  1. Beat the eggs in a mixing bowl and add the milk, tomato, onion, jalapeño, and salt.
  2. Heat a bit of Nutrioli® oil in a pan and pour the egg mix in evenly. Cook on both sides, flipping over. While still hot, add the cheese and fold in half.

TIP

You can add dried beef or chorizo to the mix and accompany your omelet with a couple of slices of avocado.
