Pecan Tube Cake

Pecans are rich in omega-3 and omega-6 fatty acids, which reduce bad cholesterol in the blood, preventing cardiovascular problems. They are also high in vitamin B6, vitamin E, and minerals such as magnesium, phosphorous, and potassium. We recommend you eat 3 to 5 pecans per day as a healthy snack.

Ingredients

  • Butter.
  • 4 eggs.
  • 1 cup of Nutrioli® oil.
  • 1 cup of muscovado sugar.
  • 1 cup of evaporated milk.
  • 3 cups of whole-wheat pancake mix.
  • 1 cup of ground pecans.

For the bottom of the cake:

  • 1 cup of whole pecans.
  • 40 g (1.4 oz) of melted butter.
  • 1/2 cup of muscovado sugar.

Directions

  1. Grease a tube pan with butter.

For the bottom of the cake:

  1. Mix all the ingredients and cover the bottom of the pan.

For the cake:

  1. Beat the eggs and Nutrioli® oil together on low speed for 2 minutes.
  2. Continuing to beat, add the sugar little by little until incorporated. Add the evaporated milk while still beating.
  3. Add the flour and pecans and beat on high speed for 5 more minutes.
  4. Pour the mix into the mold and bake at 180°C (356°F) for 45 minutes.
  5. Turn off the oven and let the cake sit for a few minutes before removing from the pan.

 

TIP

Decorate with the pecans and dust with powdered sugar if desired.
