Pork and Pineapple Skewers

 You’ll enjoy these delicious brochettes. Pork is rich in B vitamins and contains protein and essential fatty acids.

Ingredients

  • 2 TBSP Nutrioli®

For marinade:

  • 2 TBSP red wine vinegar
  • 2 cloves garlic (diced)
  • 1 TBSP crushed red pepper

For sauce:

  • ¼ cup tomato sauce
  • 2 TBSP red wine vinegar
  • 1 TBSP sugar
  • 2 TBSP low-sodium soy sauce
  • 2 TBSP Nutrioli®

For skewers:

  • Tri-colored bell peppers, cut in squares
  • Pineapple cubes
  • 1 lb. pork loin (cubed)
  • Wooden skewers

Directions

For marinade:

  1. For marinade, combine 1 tablespoon of Nutrioli® with other ingredients and set aside for at least two hours.

For sauce:

  1. Mix all ingredients together.

For skewers:

  1. Place meat, peppers and pineapple on skewers, alternating colors and ingredients.
  2. Spread remaining tablespoon of Nutrioli® on grill. Place skewers on grill and baste with marinade. Let cook for approximately 15 minutes. When almost done, baste with sauce. Turn once and serve immediately.
