Rainbow Hotcakes with Amaranth


An energy-filled breakfast! Amaranth is a good source of protein, minerals and vitamins.




  • 1 cup whole-wheat flour
  • 2 TBSP sugar
  • 2 tsp baking powder
  • Pinch of salt
  • 1 egg, beaten
  • 1¼ cups low-fat milk
  • 2 TBSP Nutrioli®
  • ½ cup amaranth
  • Natural food coloring
  • 2 TBSP Nutrioli® to grease skillet
  • ½ cup honey

  1. Mix chicken breast in a bowl with shredded zucchini and carrots, ketchup and Worcestershire sauce. Season with salt and pepper and mix well. Divide into 4 parts. Use hands to form patties.
  2. Heat grill and grease with Nutrioli®. Grill until patties are browned on the outside and done in the center.
  3. Open buns and arrange lettuce, followed by hamburger patty, American cheese and sliced tomato. Serve immediately.
