Shrimp and Spinach Salad

Spinach is one of the most nutritious vegetables. It supplies vitamin C, folic acid and minerals, such as iron, calcium and magnesium.

Ingredients

  • 2 bunches of spinach, washed and chopped
  • 2 cups sliced mushrooms
  • 16 stalks of asparagus, cut in thirds
  • 7 oz. cocktail shrimp
  • 1 TBSP Nutrioli®
  • Salt and pepper

For vinaigrette:

  • ¼ cup Nutrioli®
  • ½ cup balsamic vinegar
  • Salt and pepper

Directions

  1. Heat one tablespoon of Nutrioli® in a saucepan. Add asparagus and sauté until bright green. Season with salt and pepper, remove from heat and set aside.

For vinaigrette:

  1. To make the vinaigrette, mix ¼ cup of Nutrioli® and balsamic vinegar, season with salt and pepper and stir well until blended.
  2. Combine asparagus, spinach, mushrooms and shrimp in a large bowl. Add vinaigrette and mix well. Serve in individual bowls.
