Soy Meatballs


Soybeans are rich in protein, as well as omega-3 and omega-6 essential fatty acids. They’re highly nutritious and provide significant benefits for your cardiovascular health.


  • 2 cups textured soy protein
  • Salt to taste
  • 2 small cloves of garlic
  • 2 eggs
  • ½ cup breadcrumbs
  • 1 sprig of parsley

For sauce:

  • 2 tsp Nutrioli®
  • 4 tomatoes
  • 1 clove garlic
  • 1 TBSP chicken bouillon powder
  • ¼ of an onion

  1. Reconstitute soy protein in warm, salted water over low heat. Let stand for 10 minutes, then drain and squeeze out liquid by hand. Dice garlic and parsley and beat eggs. Once soy protein has cooled off, add diced ingredients and eggs. Mix together and add breadcrumbs. Moisten hands to form mixture into balls and place in sauce, which should be simmering over low heat.

For sauce:

  1. Boil tomatoes in a pot. Once soft, puree in blender with garlic and onion and then strain. Heat two teaspoons of Nutrioli® in a pan and pour in the sauce. Season with chicken bouillon powder and cook over low heat until boiling.
