Soybean Vegetable Soup

This delicious soup contains vegetables, which supply vitamins, minerals and fiber, as well as soy, which is rich in protein and essential fatty acids to promote good health.

Ingredients

  • 1 TBSP Nutrioli®
  • ¼ of an onion (diced)
  • 1 clove garlic
  • 4 cups water
  • 1 cup carrots, peeled and julienned
  • 1 cup squash, peeled and julienned in thick slices
  • Salt and pepper
  • 2 cups soybeans
  • 2 TBSP parsley (chopped)

Directions

  1. Heat Nutrioli® in a non-stick skillet and sauté onion until browned. Add water, carrots, soybeans and squash. Cook over low heat for 15 minutes. Add chopped parsley, season with salt and pepper and let simmer another 2 minutes. Adjust seasoning and serve hot.
