Spanish Omelet with Ham

Eggs contain high amounts of protein, essential amino acids, vitamins, minerals and antioxidants, including selenium, vitamin E and carotenoids. Enjoy all the benefits of eggs with this delicious breakfast!


  • 1 cup potatoes, peeled and cut in cubes
  • ½ of an onion (diced)
  • 1 cup ham (cubed)
  • 1 red bell pepper, cut in cubes
  • 2½ TBSP Nutrioli®
  • 8 eggs
  • ½ cup milk
  • Salt and pepper

  1. Heat two tablespoons of Nutrioli® in a non-stick skillet and sauté onion until translucent. Add bell pepper and cook for 3 minutes. Add ham and potatoes and cook for a few more minutes or until potato is browned. Remove from heat and let cool a little.
  2. Beat eggs with milk and salt. Add to potato mixture and stir well.
  3. Use remaining Nutrioli® to grease 4 individual baking pans. Fill to ¾ capacity with egg mixture. Bake for 20 minutes or until egg is cooked. Release from pans and serve immediately.
