Thai Salad

Enjoy the benefits of cabbage in this delicious salad. Cabbage supplies fiber, antioxidants and vitamins A and C, which boost the immune system, protecting you against illness.


  • 2 cups shredded kale
  • 1½ cups shredded green cabbage
  • 1½ cups shredded red cabbage
  • ½ cup red pepper (sliced)
  • ½ cup carrots (grated)
  • 1 mango (peeled and sliced)
  • ¼ cup cilantro (chopped)
  • 8 mint leaves (chopped)
  • 1 TBSP green onion (sliced)
  • ¼ cup peanuts (shelled and chopped)

For peanut dressing:

  • ⅓ cup creamy peanut butter
  • 2 TBSP lemon juice
  • 3 TBSP honey
  • 1½ TBSP rice vinegar
  • 1½ TBSP soy sauce
  • 2 TBSP Nutrioli®
  • ½ tsp ginger (grated)
  • 1 clove garlic (minced)
  • 1 TBSP water

  1. In a bowl, combine all salad ingredients (greens, herbs, vegetables and mango) except peanuts.

For peanut dressing:

  1. To make dressing, place peanut butter, lemon juice, honey, rice vinegar, soy sauce, Nutrioli, ginger, garlic and water in a blender. Blend until achieving a uniform purée. If necessary, add more water. Season with salt and pepper and pour over salad right before serving. Finally, add peanuts on top.
