Tuna is high in protein, calcium and omega-3 fatty acids, which promote cardiovascular health and cerebral function, thanks to their DHA content.
- Preheat oven to 400 °F.
- Heat Nutrioli® in a large skillet over medium heat. Add onion and sauté until translucent. Add bell pepper and cook for 5 minutes, stirring occasionally. Add tomato and season with salt. Stir, cover and cook for 10 minutes.
- Stir in tuna and then add hard-boiled egg, being careful not to stir too vigorously.
- Divide mixture among the empanada shells. Spread beaten egg on edges, close shells and use a fork to seal. Arrange empanadas in a baking dish and baste each one with the remaining beaten egg.
- Bake for 20 minutes or until golden-brown. Can be served hot or at room temperature.
