Vegetarian Taquitos


Carrots and peppers provide us with fiber, vitamins, and minerals, most importantly vitamin A, vitamin C, and potassium. Don’t hesitate to enjoy this delicious and nutritious appetizer.


  • 2 carrots cut into strips.
  • 1 red pepper cut into strips.
  • 1/2 red onion in slices.
  • 1 cup of Nutrioli® oil.
  • Salt and pepper.
  • 10 flour tortillas.

For the dip:

  • 150 g (5 oz) of plain yogurt.
  • 1 tablespoon of mayonnaise.
  • 1 tablespoon of finely chopped scallions.
  • 1 tablespoon of finely chopped parsley.

  1. Heat two tablespoons of Nutrioli® oil in a pan and sauté the carrot, pepper, onion, and add salt and pepper. Cook until the carrot is tender.
  2. Next, warm the tortillas and roll up the mix from step 1. Pin them with toothpicks if necessary.
  3. In a different pan, heat the rest of the Nutrioli® oil and fry until the taquitos are uniformly golden. Once ready, remove and set on paper towels to remove the excess grease and keep warm.

For the dip:

  1. Blend all the ingredients together until well incorporated. Season with salt and pepper.
  2. Serve the taquitos accompanied by the dip.
