Zucchini with Italian Herbs

Zucchini contains vitamin C, potassium and magnesium. It’s also very low in sodium and calories. Thanks to its soothing effects on the digestive system, it’s recommended for preventing indigestion

Ingredients

  • 6 zucchini
  • 3 TBSP Nutrioli®
  • 1 TBSP butter
  • ¼ cup fresh Italian herbs (thyme, marjoram and oregano)
  • 4 TBSP finely chopped parsley
  • ½ cup grated parmesan cheese
  • Salt and pepper

Directions

  1. Preheat oven to 350 °F.
  2. Slice zucchini into large cubes and place in a container. Add butter, Nutrioli® and parsley, and mix well.
  3. Season with salt, pepper and Italian herbs. Mix all ingredients together.
  4. Place in an oven-safe dish. Sprinkle cheese on zucchini and bake for 30 minutes or until toothpick inserted in center of zucchini cube comes out clean.
  5. Remove from oven and serve right away.
